Needing an easy cake recipe?

This is one of the easiest cakes I have made! So full of great citrus taste and minimal clean-up required.

Ingredients:

1 whole orange with skin on
180g butter, melted
3 eggs
1 cup of castor sugar
1 1/2 cups of self-raising flour
~
2 1/2 cups of icing sugar
2 tbsp soften butter
1 orange, zest and juice

Method:
  1. Preheat oven to 180C. Grease and flour a ring pan.
  2. Process the whole orange until it’s pureed.
  3. Add all other cake batter ingredients in and process until mixed, scraping down the sides as needed.
  4. Bake for 40-45min.
  5. For the icing, sift the icing sugar into a bowl. Add butter, zest and half the juice. Add extra juice as needed. Mix until somewhat smooth (the zest will make it slightly lumpy)
