
Needing an easy cake recipe?
This is one of the easiest cakes I have made! So full of great citrus taste and minimal clean-up required.
Ingredients:
1 whole orange with skin on
180g butter, melted
3 eggs
1 cup of castor sugar
1 1/2 cups of self-raising flour

2 1/2 cups of icing sugar
2 tbsp soften butter
1 orange, zest and juice
Method:
- Preheat oven to 180C. Grease and flour a ring pan.
- Process the whole orange until it’s pureed.
- Add all other cake batter ingredients in and process until mixed, scraping down the sides as needed.
- Bake for 40-45min.
- For the icing, sift the icing sugar into a bowl. Add butter, zest and half the juice. Add extra juice as needed. Mix until somewhat smooth (the zest will make it slightly lumpy)
